Gluten-Free Banana Split Ice Cream Cake: A Delight for Everyone

This post is sponsored by Walkers Shortbread, but all opinions are my own.

What makes this ice cream cake truly special and inclusive for all your summer gatherings? It’s proudly gluten-free! Thanks to the exquisite gluten-free shortbread line from Walkers Shortbread, we can craft a dessert that’s not only incredibly delicious but also caters to those with gluten sensitivities. This is a game-changer for many, allowing everyone to partake in the joy of a shared dessert without worry. Walkers Shortbread has long been celebrated for its rich, buttery taste and crisp texture, and their gluten-free range maintains this high standard of quality. Using these shortbread cookies as the “cake” layers eliminates the need for any traditional baking, simplifying the process while delivering a luxurious, melt-in-your-mouth foundation for our ice cream masterpiece. It’s a testament to how innovative ingredient choices can transform a classic into an accessible favorite for a broader audience.

Beyond its gluten-free foundation, another remarkable feature of this Banana Split Ice Cream Cake Loaf is that it’s made with effortlessly no-churn ice cream. This means you won’t need any fancy ice cream makers or specialized equipment to achieve a perfectly creamy, homemade frozen treat. The magic happens with a simple base of softened cream cheese and fluffy whipped cream, sweetened to perfection with a touch of sugar and infused with delightful flavorings. We’ll divide this versatile base to create both decadent chocolate and luscious strawberry ice cream layers, capturing the essence of a true banana split. The ease of preparation is unmatched – just mix, fold, and layer! The resulting texture is incredibly smooth and rich, so much so that no one will ever guess it wasn’t churned or bought from a premium ice cream parlor. It’s a fantastic solution for busy hosts or anyone looking for a gourmet-tasting dessert without the fuss.

One of the often-overlooked advantages of using a no-churn ice cream base in this loaf cake is its unique consistency, which allows it to hold up better than traditional ice cream. On a scorching summer day, this is an absolute blessing! You won’t feel rushed to slice and serve your dessert before it turns into a melty puddle. This improved stability gives you more time to savor each bite, enjoy conversations with your guests, and even take a few extra minutes to admire its beauty before needing to whisk it back into the freezer. This feature makes it an ideal dessert for outdoor gatherings, picnics, or any occasion where you want to minimize serving stress and maximize enjoyment. The durable texture ensures that your stunning ice cream cake retains its shape and delightful chill for longer, making it a truly practical and elegant choice.

Of course, no banana split dessert would be truly complete without its signature components. We ensure that every essential flavor and texture is lovingly incorporated into our cake loaf. Layers of perfectly ripe, sweet bananas are generously placed, offering a delightful natural sweetness and creamy texture that’s synonymous with the classic treat. Juicy crushed pineapple adds a bright, tangy counterpoint, while a sprinkle of finely chopped nuts provides that essential crunch and earthy flavor. And to crown this masterpiece, a few vibrant cherries sit atop swirls of freshly whipped cream, adding a pop of color and a final touch of traditional charm. These thoughtfully layered elements create a symphony of tastes and textures that are both familiar and exciting, ensuring that every forkful delivers the authentic banana split experience in a sophisticated new format.

The innovation of using shortbread layers truly elevates this from a simple ice cream dessert to a genuine “cake” experience, without the hassle of baking a traditional cake. Walkers Gluten-Free Pure Butter Shortbread cookies are not just a convenient choice; they impart a rich, buttery flavor and a delightful texture that forms the perfect counterpoint to the creamy ice cream. To enhance their cake-like quality, each piece of shortbread is briefly dipped in a bit of almond milk (or your milk of choice). This quick soak softens them slightly, allowing them to meld seamlessly with the ice cream and fruit layers, creating a tender, crumbly foundation that absorbs the moisture and flavors of the surrounding components. This simple step transforms the shortbread into a moist, cake-like element, making the entire loaf cohesive and utterly irresistible. It’s a smart shortcut that delivers on both taste and texture, ensuring your cake layers are not only gluten-free but also perfectly integrated and deliciously tender.

Navigating Gluten-Free Ingredients with Confidence

As I continue to explore and embrace the world of gluten-free baking, I find that many recipes can be adapted or are naturally gluten-free without realizing it. However, when it comes to specific dietary needs like gluten sensitivity or celiac disease, precision and careful ingredient sourcing are paramount. This Banana Split Ice Cream Cake Loaf is designed with gluten-free components in mind, and while the Walkers Shortbread is explicitly certified gluten-free, it’s crucial to extend that diligence to all other ingredients. Many standard kitchen staples, such as certain sugars, extracts, or toppings, might contain hidden gluten or be processed in facilities with cross-contamination risks. Therefore, for those with severe allergies, always double-check labels and opt for certified gluten-free versions of ingredients like cocoa powder, vanilla extract, and even confectionery sugar.

If you’re already an experienced gluten-free baker or cook, you’re likely familiar with these precautions and adept at navigating product labels. For newcomers, a good practice is to look for “GF” labels or certifications from trusted organizations. Remember, allergies can be serious, and ensuring a safe and delicious dessert for everyone is a top priority. Rest assured, with a little attention to detail, this recipe is entirely achievable and delivers a fantastic, worry-free dessert that everyone can enjoy without compromise. It’s a wonderful way to expand your gluten-free repertoire with a show-stopping treat that doesn’t sacrifice flavor or texture.

Description

This Banana Split Ice Cream Cake Loaf is the ultimate summer dessert! It artfully combines the nostalgic flavors of your favorite banana split into a stunning, layered ice cream cake. Easy to make with no-churn ice cream and featuring gluten-free shortbread layers, this refreshing loaf is perfect for hot days, offering a delicious and worry-free treat that everyone will love.

Ingredients

Scale

STRAWBERRY FILLING

  • 1/2 cup (80g) chopped strawberries
  • 1 tbsp water
  • 2 tbsp sugar
  • 1/2 tbsp cornstarch
  • 1/2 tsp strawberry extract
  • 12 drops pink food coloring

ICE CREAM LAYERS

  • 8 oz cream cheese, room temperature
  • 1/2 cup sugar
  • 2 tbsp almond milk
  • 1/2 tsp vanilla extract
  • 1 1/4 cup heavy whipping cream, cold
  • 1/2 cup powdered sugar
  • 2 tbsp natural unsweetened cocoa powder

ADDITIONAL INGREDIENTS

  • 3 medium bananas, sliced
  • 2 tbsp chocolate sauce
  • 2 tbsp finely chopped nuts
  • 1/4 cup crushed pineapple, drained
  • 1/3 cup almond milk
  • two 4.9 oz packages Walkers Gluten Free Pure Butter Shortbread
  • 2 tbsp caramel sauce
  • Cherries, for topping
  • Additional chocolate and caramel sauce, for drizzled topping
  • Additional strawberries, nuts and banana slices, for topping

WHIPPED CREAM

  • 1/2 cup heavy whipping cream, cold
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla extract

Instructions

1. Line a 9x5x3 inch loaf pan with clear wrap or parchment paper, ensuring enough overhang on the sides to easily lift the finished cake out later.
2. To prepare the strawberry filling, process the fresh strawberries in a food processor until a smooth puree is achieved.
3. In a small microwave-safe bowl, combine 1/4 cup of the strawberry puree, water, sugar, and cornstarch. Microwave the mixture in 10-second intervals, whisking thoroughly after each, until it begins to boil.
4. Once boiling, continue microwaving for approximately 15 more seconds, allowing it to boil gently. Remove and whisk until the mixture is smooth and thickened. This process should take around 2 minutes in total. Set aside to cool completely to room temperature.
5. For the no-churn ice cream base, beat the cream cheese and sugar in a large mixer bowl until the mixture is light and smooth.
6. Incorporate the almond milk and vanilla extract into the cream cheese mixture, beating until they are well combined. Set this mixture aside.
7. In a separate, clean mixer bowl, add the cold heavy whipping cream and powdered sugar. Whip on high speed until firm, stiff peaks form.
8. Gently fold about one-third of the whipped cream into the cream cheese mixture to lighten it, then carefully fold in the remaining whipped cream until everything is just combined and no streaks remain.
9. Divide the resulting ice cream base evenly between two separate bowls. To one bowl, add the natural unsweetened cocoa powder and fold gently until a uniform chocolate ice cream is formed. To the second bowl, add the completely cooled strawberry filling and fold until evenly incorporated, creating a vibrant strawberry ice cream. Set both aside.
10. To begin assembling the cake in the prepared loaf pan, arrange a single layer of evenly sliced bananas at the bottom.
11. Carefully spread the strawberry ice cream mixture in an even layer over the bananas, ensuring it reaches all edges of the pan.
12. Place another layer of sliced bananas on top of the strawberry ice cream.
13. Drizzle the chocolate sauce generously over this banana layer, then sprinkle with the finely chopped nuts and drained crushed pineapple.
14. Pour the additional almond milk into a shallow bowl. Quickly dip each piece of Walkers Gluten-Free Pure Butter Shortbread into the almond milk (just a quick dip to moisten), then arrange them in an even layer over the fruit and nut toppings. Gently press the shortbread into the layers below.
15. Follow with the chocolate ice cream, spreading it evenly over the shortbread layer.
16. Add a third layer of sliced bananas, then drizzle with the caramel sauce.
17. Repeat the shortbread layer: dip each piece in almond milk and place them over the caramel and bananas, pressing gently to secure.
18. Place the assembled cake loaf in the freezer and allow it to firm up completely for 4-5 hours, or ideally overnight, until it is solid.
19. Once firm, use the overhanging clear wrap or parchment paper to carefully lift the cake out of the loaf pan and transfer it to a serving dish.
20. For the final whipped cream topping, add the cold heavy whipping cream and powdered sugar to a mixer bowl. Whip on high speed until stiff peaks are formed.
21. Using a piping bag fitted with your favorite star tip (such as Ateco tip 844, Wilton tip 1M, or 2D), pipe 4-5 decorative swirls of whipped cream down the center of the ice cream cake. Finish the cake with an additional drizzle of caramel and chocolate sauce, a sprinkle of fresh chopped strawberries, extra banana slices, and a few more chopped nuts. Crown each whipped cream swirl with a bright red cherry. Return the cake to the freezer until ready to serve, allowing it to maintain its perfect frozen state.
