My immediate thought was, “Yes, please!” This intriguing recipe for Garth Brooks’ favorite breakfast lasagna captured my culinary imagination, especially since I wholeheartedly adore almost all things breakfast (with the sole exception of pancakes, perhaps).

I did find myself making a few very minor adjustments to the original recipe, mostly due to ingredient availability. I didn’t have pimentos or whole milk on hand, and I opted to substitute maple bacon for regular bacon. So, I used 2% milk instead of whole milk and simply omitted the pimentos. All things considered, I don’t believe these small changes significantly altered the delicious outcome of the dish. The flavors remained rich and satisfying.

I believe this recipe would yield 8 very generous servings, making it perfect for a crowd. I chose not to serve it with any additional sides, allowing the lasagna to be the star. However, if I were preparing this for a larger group, I would certainly include a colorful bowl of fresh, cut fruit to provide a lighter contrast to the hearty dish. It’s a very robust and satisfying breakfast creation that I would typically reserve for special group gatherings or a cozy winter morning feast.
