  • 3/4 cup (168g) unsalted Challenge butter, room temperature
  • 1/4 cup (60ml) vegetable oil
  • 2 cups (414g) sugar
  • 4 eggs
  • 1 tbsp vanilla extract
  • 1 1/3 cups (400ml) buttermilk*
  • Violet gel icing color
  • Royal Blue gel icing color
  • Leaf Green gel icing color
  • Lemon Yellow gel icing color
  • Orange gel icing color
  • Red gel icing color

Vanilla Rainbow Buttercream

  • 2 cups (448g) salted Challenge butter, room temperature
  • 1 cup (189g) shortening
  • 11–12 cups (1265g-1380g) powdered sugar
  • 1 tbsp vanilla extract*
  • 4–5 tbsp (60-75ml) water or milk
  • Violet gel icing color
  • Royal Blue gel icing color
  • Leaf Green gel icing color
  • Lemon Yellow gel icing color
  • Orange gel icing color
  • Red gel icing color

Instructions

Make the Cake Layers

  1. Prepare three 8-inch cake pans with parchment paper circles in the bottom and generously grease the sides. Preheat your oven to 350°F (176°C).
  2. In a medium-sized bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large mixer bowl, add the softened butter, vegetable oil, and sugar. Beat them together on medium-high speed until the mixture is light in color and fluffy, typically 3-4 minutes. This creaming process is essential; ensure you see a clear change in color and texture.
  4. Add the eggs two at a time, mixing well after each addition. Incorporate the vanilla extract with the second round of eggs. Scrape down the sides and bottom of the bowl as needed to ensure all ingredients are fully incorporated.
  5. Add half of the dry ingredients to the wet batter and mix on low speed until just combined.
  6. Pour in the buttermilk and mix until well combined.
  7. Add the remaining dry ingredients and mix on low speed until just smooth and combined. Be careful not to overmix the batter, as this can lead to a tough cake.
  8. Divide the batter evenly between 6 separate bowls. For accuracy, aim for slightly more than one cup of batter per bowl.
  9. Add a different gel icing color to each bowl (purple, blue, green, yellow, orange, red) and gently fold until the color is thoroughly mixed and vibrant.
  10. To create the rainbow swirl, begin by dropping spoonfuls of purple batter around the bottom of each of the three prepared cake pans. Divide each color evenly among the three pans. After adding purple, give the pan a gentle side-to-side shake to slightly distribute the batter. Continue layering with blue, then green, yellow, orange, and finally red batter, shaking gently after each color addition.
  11. Bake the cakes for 28-33 minutes, or until a toothpick inserted into the center comes out clean.
  12. Remove the cakes from the oven and allow them to cool in their pans for 2-3 minutes before carefully inverting them onto cooling racks to cool completely. They must be entirely cool before frosting.

Make the Frosting

  1. In a large mixer bowl, combine the softened butter and shortening. Beat on medium speed until smooth and creamy.
  2. Add approximately half of the powdered sugar to the bowl and mix on low speed until well combined and smooth.
  3. Stir in the vanilla extract and 2 tablespoons of water or milk. Mix until fully incorporated.
  4. Gradually add the remaining powdered sugar, mixing on low speed until smooth, light, and fluffy.
  5. If needed, add additional water or milk one tablespoon at a time, until your frosting reaches the desired smooth, pipeable consistency.

Assemble the Cake

  1. Once your cake layers are completely cooled, use a serrated knife to carefully level the domes from the top of each cake layer, creating flat surfaces.
  2. Place the first leveled cake layer on a cake plate or cardboard cake circle. Top with about 1 cup of white frosting and spread it evenly to the edges.
  3. Carefully place the second cake layer on top, then add another even layer of white frosting.
  4. Position the final cake layer on top. Apply a thin crumb coat of white frosting to the entire outside of the cake to seal in any loose crumbs. Then, apply a final, smooth layer of white frosting around the sides and top of the cake. (Feel free to reference a tutorial for frosting a smooth cake if you need extra guidance.)
  5. Divide the remaining white frosting evenly into 6 small bowls. You’ll likely have about 1/3 cup of frosting per bowl, depending on how much you used for the cake layers.
  6. Using your gel icing colors, color each bowl of frosting a different rainbow hue: purple, blue, green, yellow, orange, and red. Mix gently until the colors are vibrant and uniform.
  7. To create the stunning rainbow swirl border, pipe each colored frosting into separate ziplock bags. Lay out a piece of clear plastic wrap on your clean counter. Snip a small corner off each ziplock bag. Pipe a thick, straight line of each colored frosting, side-by-side, onto the clear wrap in the rainbow order (purple, blue, green, yellow, orange, red).
  8. Carefully fold the clear wrap over the frosting, rolling it into a tight log (refer to the photos above for visual guidance). Twist one end of the log firmly to seal the frosting inside. If needed, trim the other end of the wrap so the frosting is exposed at the tip.
  9. Place the rainbow frosting log, open end first, into a large piping bag fitted with your desired piping tip (Ateco 849 is recommended for beautiful shells).
  10. Begin piping shells or rosettes around the top edge of the cake. After piping each shell, give the piping bag a slight turn before piping the next one. This continuous piping and turning motion will create a mesmerizing, rotating rainbow effect, showcasing all the beautiful colors.
  11. To pipe shells around the bottom edge of the cake, create another fresh log of rainbow frosting following steps 24-26. Then, pipe shells around the base in the same manner, turning the bag slightly after each shell to maintain the rotating rainbow pattern.
  12. Store your magnificent Rainbow Swirl Cake in an airtight container at room temperature or in the refrigerator until you’re ready to serve. For the best flavor and texture, the cake is ideal for 2-3 days.
