  3. Add the butter, oil, sugar and extracts to a large mixer bowl and beat together until light in color and fluffy, about 3-4 minutes. Do not skimp on the creaming time.
  4. Add the eggs one at a time, mixing until mostly combined after each. Scrape down the sides of the bowl as needed to be sure all ingredients are well incorporated.

  6. Place the first cake on a serving plate or a cardboard cake round. Spread about 1 cup of frosting evenly on top of the cake. Add the second layer of cake and another cup of frosting.

  8. Press shredded coconut onto the sides of the cake only. You’ll want to add it right away, so that the frosting doesn’t “crust” and make it difficult for the coconut to stick.
  9. Pipe swirls of frosting on the top of the cake, then fill in the center with shredded coconut. If you add coconut all over the top of the cake and then pipe the swirls on, the frosting won’t stick as well when piped.
